Maybe this is not the same for anyone else, but Monday’s are no different for me than any other day of the week. My routine is based on 7 days in a week and the start of my day is the same no matter what day it is. I was late getting up this morning even though I was awake, which meant I was not at work until about 6:15. Not a monumental loss of time but it did put me behind schedule.
Tosay I baked the breads and I also made another gluten free bread and like last time it turned out terrific. This time the hydration was 85% and they feel nice and soft on the inside. I have not eaten one of them so I cannot say how they taste but I have not gotten any complaints.

I also made croissants again. I think the more I bake them the less I understand. The plan is the more of these photos you see the more you want to eat what I bake ... is it working!?!?
I made two more things, first I made mini tarts with leftover croissant dough, filled with chocolate, apples, and peaches... yummy. And I finished the day off by baking ensaimadas. I do not think they are exactly what the typical ones are like but they taste amazing.. I took three recipes and combined them into one and I think it works. Next time I will get the dough strands smaller and spread them out a bit more so they stay flatter. That is the more typical design.

If people like these I will definitely make more and start selling them. I hope to get feedback by tomorrow so I can make them for Thursday. That would be awesome..
