Anyone who knows me can say I am a sensitive person. I will get emotional over things that happen that move me, and I am not above a tear. Today is no exception. Sometime in the morning around 10:30 there was a delivery. It was a big beautiful plant.
It turned out that six of my friends from Basel decided to send me a beautiful plant and a card just because ... (I cropped out their names...)
How incredibly sweet, loving, and thoughtful was this? For me, it does not get any better and now the beautiful plant is for everyone to see in the bakery. What I said earlier was we do not always know how we impact others until something like this happens. For me, it is incredible and I wish I could give a hug to all six of these friends right now! ❤️❤️

I am not so sure today was a great day for money, but it certainly was a gratifying day. We get many compliments on my cookies (not sharing that recipe just yet) and so many people compliment the other foods too, especially the croissants.
I had three orders for gluten free bread too and they turned out amazing like last time. I am convinced the high hydration is the key to this success. Here is a link to the flour I use.
The recipe as I make it:
1kg of this flour (the whole bag)
850g water
25g fresh yeast
20g salt
Instructions: Because this is a gluten free bread, there is no need to kneed it to try and build gluten strength. I mix until it is one nice piece of dough. Also, I set aside about 30g for dusting later on.
Once mixed I let it rest until double in size. I then gently shape it in to a bolle or for a pan loaf and then let it rest in that destination a bit longer.
i bake on a high heat like 230 for about 22 minutes and then turn the oven down to 190 and bake another 20 minutes or so. As Bertinet says, four minutes... don’t forget a pan on the bottom of the oven with about a cup of water too
