Bakery Day 45: half of a quarter is complete

It’s hard to believe that 45 days  the bakery is now complete. We work so hard that many days are truly a blur and I have no idea what day it is... but that is a good thing yes?

Now, following up on an observation from a few weeks ago.. do you recall me talking about having time off is more than likely worse than never having a day off? Well, I am starting to think this is true. Wednesday’s are the day we have picked to only be open a short day and to not bake bread. What this means is I get to sleep. It is hard for Sandy because she has to be at work early and work alone, and explain to every customer that wants bread that we don’t have any, but it is ok.  I have thought of the idea of baking Tuesday evening some bread so she has some for the morning and maybe starting next week I will do that. I try not to make so much bread at night because f he machinery and the time it takes with fermentation, etc. But I can start around three and be done by 7 or 8, depending on the breads.

Speaking of... I got my first order for sourdough bread yesterday so I started that ferment early today and only used the starter of course as the levening. Of course the breads are special and I do need to think about what the price will be but it makes me happy for sure.

And the not so thrilling news (2 things). First, a woman asked me to make the Spanish breads with veggies and baked. I am not sure if they are spelled coke or not but I will look tomorrow. I was under pressure and said ten euros for a sheet. This is about 30% of the cost if someone bought single pieces. Well, now she want two of them which is only twenty euros and my cost will be able 15€ so in the end it is not profitable. I explained this to her today. She was a bit surprised and then I said, listen, you can get here cheap at mercadona but you do not have the same quality.

She then asked me to bake 35 cupcakes, half of them chocolate with vanilla icing and the other half vanilla with chocolate icing. I told her .75€ per each is as low as I will go but these prices are contingent upon her telling her friends where she got the food and that they should want to come too, and that the price she got was as special discount for this areangement. In the end, if she does promote the bakery it is money well spent and I am only losing time.

Ok... tomorrow is Thursday so i must sleep now. It is a long day for sure and a very hard one to boot. Where does that expression come from? I willf look it up.

Closing in on ten months

And what a journey it has become!!! I don’t know what to say or where to direct my energy in this blog entry. Some of the content is a repeat of what I’ve said many times and some maybe different. The bakery continues to struggle to meet the ends and while there are more customers it does not seem to change many of the outcomes. Bakery Day 19: Working smarter, not easier

Today I have been feeling extra sick. As I am writing this I am wet from perspiration, and weak. I knew this morning when I got up that I had to think smartly about the work I did today. I also knew, that I needed to focus my energy in a perfect way so that I do not weaken myself more. As with each morning, I start out with making white bread, 5kg of flour, 3500 of water, 100g salt, 120+g fresh starter, and 750g of masa madre (starter, sour dough starter)... while this is mixing I already have the croissants out of the refrigerator getting to room temperature and starting to rise and the oven is on. Funny thing about the croissants... two days in a row I forgot to glaze them before I started baking them. This is making me crazy that I keep forgetting this. I also had a small problem with the dough last night, the butter came through the dough two times. I really must find a way to focus more. Eugeni told me to get my dough to 5mm... wow.. i need a perfect temperature for this to happen...

Bakery Day 69: lots of baking

I was up early this morning so I went to the bakery just after five. Let me premise this by saying, when I get to the bakery I wash my hands and immediately start the first bread in the mixer. When I opened the refrigerator to gather the needed things (masa madre, fresh yeast, and cold water) I was treated to a surprise of a pitcher of soya milk and a few other things falling out. The milk went all over me and made a mess of the floor. Not my favorite start to the day! Once I got the mess in order, I moved on to baking: i made white breads, raisin breads, integral breads, a double order of brioche cinnamon rolls with icing. I made croissants, and the focaccia. By this time the cinnamon rolls sold out so I needed to make another bath of them.  After some cleaning I then started on the tapas for this evening. First I baked crostini’s and then I made a puff pastry. After this I did some cooking to prepare. I made a garlic and spinach, a walnut pate to be served on the crostini with olives...
