Bakery Day 49: Learning one step at a time

Today was a normal day at the bakery. Not so many customers, not so much bread made, but a nice pleasant day for sure.  Once the bakery was closed I made 25 empanadas for a customer who will pick them up around 8-8:30 tomorrow morning, and of course, I made some extra for the bakery.   I hope they hold up ok and are tasty. I found the filling to be a bit salty, but maybe with the bread around them they will be ok... Lets see.

We have been talking about closing for one day or finding a way to get a rest for some time. While I feel like it is a money out of the pocket idea to be closed, I also realize it is important to find 24 hours of rest, or at least not doing bakery stuff. I am never in my apartment anymore other than sleeping and showering, and I miss just relaxing and doing nothing, with no thought of what I need to get done for the afternoon crowd.  I also believe this is a normal transition with businesses, where at first they are open every day and then looking for that day where business is slowest, or when it makes the most sense, to just be closed one day in the week.   With all that said, I think starting next week, we will be closed on Monday's. For me, it is the perfect day of the week to be closed because Sunday is a half day. I may still have to go to the bakery Monday evening to do prep work for Tuesday morning, but I can at least have 24 hours of down time. The only other day that made sense was Wednesday, but because Thursday is our busiest day, I must do 5-6 hours of prep Wednesday afternoon along with shopping for supplies so it really would not be a day off at all.

I am sure it will feel odd to not be at the bakery for a day, but in time I am also sure it is the right thing to do.

In closing, here is a little game for you (if you speak Spanish of course it will help). I made these small flyers to hand out and after having them for a few days in the shop, someone noticed to typo's, or words spelled incorrectly to be more specific.  Today I have fixed and ordered new ones, but let's see if you can find them.



 

As always, thank you very much for taking the time to read the blog, I am not tired of writing in it yet, even though some days I am too tired to do it, but yet, find that energy to finish. It is 7:46pm and I will now go to bed so I can get up early tomorrow

  1. Mon or tue are good days to have a day off. Most indian/thai restaurants in my area always close for a day. Good idea, i say

  2. Its a great idea... monday is my vote because Sunday is also a half day which means I could actually have 24 full hours of rest :) The only problem is I see the days when everyone is closed as opportunity :)

Closing in on ten months

And what a journey it has become!!! I don’t know what to say or where to direct my energy in this blog entry. Some of the content is a repeat of what I’ve said many times and some maybe different. The bakery continues to struggle to meet the ends and while there are more customers it does not seem to change many of the outcomes. I spend time looking at the costs versus the income and I see little in terms of gaps that can be tightened. Really... I want to give up! I want to close the doors and never look back. Bakery Day 19: Working smarter, not easier

Today I have been feeling extra sick. As I am writing this I am wet from perspiration, and weak. I knew this morning when I got up that I had to think smartly about the work I did today. I also knew, that I needed to focus my energy in a perfect way so that I do not weaken myself more. As with each morning, I start out with making white bread, 5kg of flour, 3500 of water, 100g salt, 120+g fresh starter, and 750g of masa madre (starter, sour dough starter)... while this is mixing I already have the croissants out of the refrigerator getting to room temperature and starting to rise and the oven is on. Funny thing about the croissants... two days in a row I forgot to glaze them before I started baking them. This is making me crazy that I keep forgetting this. I also had a small problem with the dough last night, the butter came through the dough two times. I really must find a way to focus more. Eugeni told me to get my dough to 5mm... wow.. i need a perfect temperature for this to happen...

Bakery Day 69: lots of baking

I was up early this morning so I went to the bakery just after five. Let me premise this by saying, when I get to the bakery I wash my hands and immediately start the first bread in the mixer. When I opened the refrigerator to gather the needed things (masa madre, fresh yeast, and cold water) I was treated to a surprise of a pitcher of soya milk and a few other things falling out. The milk went all over me and made a mess of the floor. Not my favorite start to the day! Once I got the mess in order, I moved on to baking: i made white breads, raisin breads, integral breads, a double order of brioche cinnamon rolls with icing. I made croissants, and the focaccia. By this time the cinnamon rolls sold out so I needed to make another bath of them.  After some cleaning I then started on the tapas for this evening. First I baked crostini’s and then I made a puff pastry. After this I did some cooking to prepare. I made a garlic and spinach, a walnut pate to be served on the crostini with olives...
