Today is the day I am not supposed to bake breads in the morning. The sole purpose of this is so I can rest a bit. But, we had an order for two special breads, one spelt, and one gluten free. So, I went in around 7 which of course is later than normal and made those plus I made some integral bread. It is funny, that on the days we do not have bread, people come in droves asking for bread, and on the days I make a lot, it just sits, watching the day pass by without many visiting customers.
Once I was done with the bread I started baking for tomorrow. I decided to just do it all early today so I did not have to be there late tonight. But, before I did that, I made the cocas de patatas again after letting it rest over night and they turned out fantastic. I will start making them more often for sure!!
For the rest of the baking, I made a full batch of croissants, I think 38, I forgot to count. I also made donuts, but I really need to work on the creativity for them. I did buy some "russian pipping tips" which will make small flowers so I cannot wait to get them and see how they come out.

And then I made a few types (braided, strudel, half moon, and flours) of puff pastry filled with apples and some with peaches. They taste amazing!! Ok, I only had one apple one to quality control, but it was great.
...
I hope tomorrow is a better thursday than the previous two have been. We really need to start increasing our income somehow, while maintaining the integrity of the work we do, as well as stay identified as a bakery, which is very important to me.
...
In closing, what I reflected on today is what makes the bakery different than any other place around. We are building relationships with our customers. This I like very much. It is such a pleasure to see many of the same faces come and go and enjoy. My hope is that in the long run, this will help sustain us, and build a place that people love to come to, enjoy something nice to eat, and always leave with a smile. Nothing to me is more important than that!
Thank you very much as always for reading the blog, it means a lot to me.
