Bakery Day 73: tax time



Coming in to today I was still feeling the happiness from the hard work last night. This morning I went to the bakery to get the croissants out so they could rise. In the end I let them rise for 150 minutes but it was not enough, I still did not get those beautiful bubbles I wanted.  Also, the taste was quite a bit different than mine. For tomorrow there will be more of the same since I have four batches. In the morning, I will get them out early and this time, I will give them plenty of more time to rise, as I think they needed another 45 minutes to an hour.

This afternoon I went to the bakery and of course made a few things for tomorrow, croissant shapes and laminating, empanadas, and donuts.  I also took some leftover croissant dough from last night and made little pastry cups with chocolate in the bottom. Tomorrow morning I will fill them with a chocolate mousse and then sprinkle with bits of almond for a crunch.



I must say, it feels weird not being open four nights a week, and closed completely one day a week. I know we need the rest, but three customers came to the door tonight while I was baking and to me, that is money out of the pocket.

Taxes... turns out we must file them quarterly and there is no leniency. To make matters worse, this means they need to be done by Friday. So I do not get overly frustrated, I will just say, the communication between the person responsible for making sure I get these things done  and me, is terrible at best. I have already contacted someone else to see if there is a possibility to switch for next year. I cannot have last minute stress all the time because I am waiting to learn something that I have no idea exists until it shows up.  Today, I spent the better part of five hours going through all of my receipts and income and to make sure everything is included. The problem is, not everything can be included. Why? Glad you asked. A factura (a receipt for goods bought or sold) comes in multiple ways. For the one that is necessary with taxes, the factura must include the business tax ID and business name. I cannot begin to tell you how many businesses do not provide such necessary details. So, they cannot be included. One market which I shop at a lot allows you to input the data online, it then retrieves the records and gives a pdf with these details. Problem there is they do not roll it up in to one master document, thank you very much.  Anyway, I think they are done. Our expenses for this quarter are three times what we had as income and this does not include our electric bill since we have yet to get one. It is also missing the building taxes because the owner would not give us a proper factura (this will be the last time he skirt that one for sure with me).

Oh yes.. the ensiamadas ... i bet you thought I forgot.. I think they turned out really nice. The texture and taste is nothing like I expected, but they really are pleasant and I hope in time my skills increase so I can make them as part of a regular rotation. This week I will make a couple of changes to the croissants, but starting next week, my plan is to use mondays to prep croissants for the week, along with ensaimadas and empanadas, so each day my work load is much lower.



Maybe it will be two weeks since Monday Sandy and I will be in Barcelona. She doesn't know yet, but I got us tickets to go and spend Sunday night and all day Monday there, just so we can get away. Do not worry, the surprise is safe here, she does not read the blog.  Maybe one day she will... lets see.

Closing in on ten months

And what a journey it has become!!! I don’t know what to say or where to direct my energy in this blog entry. Some of the content is a repeat of what I’ve said many times and some maybe different. The bakery continues to struggle to meet the ends and while there are more customers it does not seem to change many of the outcomes. I spend time looking at the costs versus the income and I see little in terms of gaps that can be tightened. Really... I want to give up! I want to close the doors and never look back. Bakery Day 19: Working smarter, not easier

Today I have been feeling extra sick. As I am writing this I am wet from perspiration, and weak. I knew this morning when I got up that I had to think smartly about the work I did today. I also knew, that I needed to focus my energy in a perfect way so that I do not weaken myself more. As with each morning, I start out with making white bread, 5kg of flour, 3500 of water, 100g salt, 120+g fresh starter, and 750g of masa madre (starter, sour dough starter)... while this is mixing I already have the croissants out of the refrigerator getting to room temperature and starting to rise and the oven is on. Funny thing about the croissants... two days in a row I forgot to glaze them before I started baking them. This is making me crazy that I keep forgetting this. I also had a small problem with the dough last night, the butter came through the dough two times. I really must find a way to focus more. Eugeni told me to get my dough to 5mm... wow.. i need a perfect temperature for this to happen...

Bakery Day 69: lots of baking

I was up early this morning so I went to the bakery just after five. Let me premise this by saying, when I get to the bakery I wash my hands and immediately start the first bread in the mixer. When I opened the refrigerator to gather the needed things (masa madre, fresh yeast, and cold water) I was treated to a surprise of a pitcher of soya milk and a few other things falling out. The milk went all over me and made a mess of the floor. Not my favorite start to the day! Once I got the mess in order, I moved on to baking: i made white breads, raisin breads, integral breads, a double order of brioche cinnamon rolls with icing. I made croissants, and the focaccia. By this time the cinnamon rolls sold out so I needed to make another bath of them.  After some cleaning I then started on the tapas for this evening. First I baked crostini’s and then I made a puff pastry. After this I did some cooking to prepare. I made a garlic and spinach, a walnut pate to be served on the crostini with olives...
